Old Rag Pie - Sweet Version

Finally, I came up with a delicious recipe for the sweet version of the old rag pie. I was working on a similar Greek recipe from the same category, Portokalopita - it's actually the same rag pie, but with yogurt and orange syrup. Things just settled down in my head and I was able to see clearly how to turn this sweet cheese pastry into an extremely tasty and tender rag pie.

This sweet rag pie is simply wonderful, it's very easy to make and it will be appreciated by the whole family. For a stronger cheese flavour, pick some cheese with bigger crumbles and well drained. Softer cheese will be delicious as well. You can also add some raisins or cranberries, whatever you like.

Ingredients
Phylo dough sheets
400 g
1 store-bought packet, thawed in advance
Farmers cheese
500 g
pick a more crumbly and well drained cheese
Egg
4 pieces
Sugar
200 g
Vegetable oil
200 ml
or melted butter
Yoghurt
250 g
Milk
250 ml
Baking powder
20 g
Vanilla Extract
1 tbsp
plus other flavours you like
Raisins
50 g
or cranberries, optional

When the filo pastry is thawed, you can actually start making the recipe.

So, place the eggs and 200g sugar in a big bowl, mix well with a whisk.

Slowly stir in the oil or melted butter, combine.

Pour in the milk, yogurt, baking soda and vanilla extract, mix.

And, finally, the cow's cheese, stir well.

Unfold the filo sheets and cut into 5-6cm wide strips.

Then grab them all together and cut into 1cm wide slices, just like pasta.

Tip these filo rags into the bowl with the eggs and cheese mixture.

Mix very thoroughly and insist, so that all the filo rags are completely coated.

You can let stand for 5 minutes after that for the pastry to absorb the mixture.

Spoon the entire mixture into a large baking sheet, lined with parchment paper, spread evenly to cover the whole surface.

I used here a rectangular 40x30cm baking sheet, but a regular oven sheet will do as well.

Bake in the preheated oven to 180 degrees C for 40-45 minutes, until nice golden-brown. 

Remove from the oven and allow to cool completely in the baking sheet.

Slice and serve. Optionally, you can dust with powdered sugar on top.
