I'm quite particular about vegan recipes, especially when it comes to food like patties. I've enjoyed only a handful of recipes, which are featured on my site. Many others do not appeal to me due to their soft and sticky texture.
The combination of chickpeas and carrots intrigued me, prompting me to experiment in the kitchen. The result was delightful vegan patties, both delicious and substantial, which I believe would appeal even to those who prefer meat.
Place the chickpeas and coarsely chopped onions in a blender or food processor.
Add the remaining ingredients, leaving out the chickpea flour for now.
Blend thoroughly until a smooth paste forms. Taste for salt and adjust if needed.
This is how my chickpea flour bag looks.
It's a great egg substitute for many vegetarian dishes like patties, pancakes, etc.
Add the chickpea flour to the vegetable chickpea paste and mix well using a spoon or your hands.
Let it sit for 5 minutes, then check if the mixture is ready for forming patties.
It should be thick and not sticky. If it's too liquid, add 1-2 tablespoons of chickpea flour.
Form the patties (slightly thicker than shown in the picture) and arrange them on a non-stick tray or one lined with baking paper.
Bake in a preheated oven at 200°C for 15-20 minutes on one side, then flip and bake for another 5 minutes.
Allow them to cool slightly before serving with a green salad, tomato sauce, or any side dish like rice, potatoes, vegetables, etc.
