Easy Walnut Cranberry Oatmeal Cookies

Recently, I've discovered this recipe for oatmeal cookies. It's very practical, simple and from ingredients full of nutrients. Firstly, I really liked the idea of not having to shape each biscuit with my hands. Then, this method of freezing allows you to quickly cut into biscuits and also to have the dough always ready in the freezer. Whenever you need biscuits, just slice and bake it.

I forgot to mention that, besides the fact that they are easy to prepare, these cookies are very tasty, tender, crunchy. The brown sugar flavour together with butter, toasted walnuts and cranberries is a combination you will definitely want to repeat. They conquered me, so from now on I will always have some biscuit dough in the freezer for the morning coffee, and not only.

Ingredients
Butter
200 g
softened, at room temperature
Brown sugar
200 g
or regular sugar
Egg
2 pieces
Vanilla Extract
1 tsp
All-Purpose Flour
400 g
I combined it 50% with wholemeal flour
Baking powder
1 tsp
Walnuts
200 g
whichever nuts you prefer
Oat flakes
250 g
large flakes, as little processed as possible
Dried cranberries
150 g
or your favorite dried fruits, or the ones you have

Step 1

In a bowl, combine 200g soft butter with 200g brown sugar, 2 eggs and 1 teaspoon of vanilla essence.

Add 400g of flour and 1 teaspoon of baking powder to this mixture.

You can replace up to 50% of the white flour with the same amount of wholemeal flour.

Mix well with a spatula or spoon.

You will get a dense and uniform dough, like the play doh.

Chop the walnuts into larger pieces with a knife.

Don't use a food processor or a chopper, the bits must be coarser.

You can replace the simple walnuts with any other favorite nuts - almonds, hazelnuts, sunflower seeds, pumpkin, chia etc.

Toss the nuts over the dough we prepared above, add in the oatmeal and the cranberries.

Mix everything together. It's better with your hands, as the dough is a bit thicker.

Divide the dough into 4 equal pieces.

Shape each piece into a thicker log.

Wrap in cling film.

Arrange the 4 logs on a flat cutting board and place in the freezer for 2 hours or more.

I used 2 logs for a batch of cookies now. When they are finished, I will use the other two logs.

So, whenever you want to make cookies, take a log from the freezer, remove the cling.

With a larger knife, cut into slices about 7-8mm thick.

The dough being dense and frozen, you'll have to push hard with both hands on the knife blade. Protect the hand that comes on the blade with a towel, for a better and safer support.

Then arrange the slices in an oven sheet lined with parchment.

Bake the biscuits in the preheated oven at 200 C for about 20 minutes or until lightly browned.

Allow to cool completely, then serve and taste - they are tender, crunchy and very fragrant.
