Quick Sheet Pan Pancakes

After I discovered this sheet pan pancake recipe, I felt sorry I hadn't known it before. I was surprised by the tender texture, the dough was very soft and pleasant, maybe even tastier than the classic pancakes. Besides, you no longer have to waste time frying each pancake separately. I guarantee you will have the same result (maybe even better), but with much less effort.

Another advantage of this recipe is that you can have several fillings in the same pan, to please the whole family - chocolate, fruit, caramel, peanut butter. For us, the apples and cinnamon filling and the banana one were very successful.

Even if it looks more like a cake, the texture is more like of a fluffy pancake, more elastic and tender, so they are, indeed, pancakes. Don't hesitate to try them and let yourself be surprised!

Ingredients
All-Purpose Flour
300 g
Baking powder
12 g
Baking soda
3 g
Salt
0.5 tsp
Sugar
100 g
or less
Buttermilk/Youghurt/Kefir
450 g
Egg
4 pieces
Vanilla Extract
1 tsp
Melted butter
50 g
Fruits
400 g
whichever fruit you like or bits of chocolate, peanut butter etc. - for the topping

Step 1

In a large bowl, combine 300g of flour with 12g of baking powder, 3g of baking soda, 0.5 teaspoon of salt and 100g of sugar.

In a different bowl, mix together 450g of kefir, 4 eggs and 1 teaspoon of vanilla essence.

Add in here the flour mixture from step 1, stir a bit.

Pour in 50g of melted butter, slightly cooled.

Mix with a whisk until the batter is smooth.

Pour into a large baking tray (the classic oven tray), lined with parchment, and even out with a spoon.

Make some lines with the tip of a knife to mark the areas where you will put the various fillings.

It will be easier to arrange them and the final pancake will look better.

Here I put blueberries and chocolate flakes (you can cut a simple chocolate bar into small pieces, if you don't have flakes).

In the other 2 areas, I put banana (cut into somewhat thicker slices) and apple slices.

I sprinkled with a little brown sugar and cinnamon over the apples. The combination was very successful and appreciated.

Bake this giant pancake in the preheated oven at 220 C for 20-25 minutes.

When ready, leave on the table for 10 minutes to cool slightly.

After that, cut the pancake into larger or smaller squares.

You can have them simple or with honey, maple syrup, fruit sauces, chocolate, your favorite jam etc.
