Baked fish with vegetables

It's a very easy, healthy and delicious baked fish with vegetables. This is my father's favorite recipe, and I love to cook it as it is simple and tasty. You can bake any fish you like using this recipe.

Ingredients
Carrots
3 pieces
White onion
3 pieces
Tomatoes
2 pieces
Sunflower oil
50 ml
Pepper
0.5 tsp
Salt
1 tsp
Dried basil
1 tsp
Bacon
1.5 kg

Step by step
Step 1

Rinse and dry the fish, salt and pepper it. Clean and wash the carrots, onions and tomatoes.

Slice the carrots into rounds cuts.

Slice the onions.

In a deep bowl place the carrots, onions and tomatoes sliced thick, put some salt, pepper, basil and oil.

Mix well.

Put the vegetables in a baking pan.

Cut the fish into big pieces, or you can also leave it in one piece. Put the fish over the vegetables in pan and brush the top with some olive oil or mayonnaise - so it will make a nice crust while baking. Bake it at 200 C, for one hour, or until browned.

When browned, try the vegetables to see if they're cooked. If not, leave them in the oven for another 15-20 minutes.

You can eat this baked fish hot or cold, as you like.
