Easy Gluten-free Almond Cookies

These delightful cookies are incredibly easy to make and are a healthy gluten-free treat. 

You can replace the sugar with sweetener powder or honey for a no-sugar alternative. Highly recommended for everyone!

Ingredients
Almonds
300 g
   
Egg
1 piece
   
Sugar
150 g
I use brown sugar, but any sweetener can be used
Vanilla Extract
1 tbsp
   
Step by step
Step 1

Pour boiling water over the almonds, let sit for 2-3 minutes, then drain and peel the skins. 

Blanching makes them easier to peel.

Finely chop the almonds using a blender or food processor.

Combine the almonds with the sugar and vanilla extract.

Lightly beat the egg and add it to the almond mixture. Mix thoroughly with your hands until the dough becomes sticky.

Shape the dough into small balls, flatten slightly to form cookies. 

Arrange them on a buttered or parchment paper-lined baking tray (parchment paper is recommended).

Bake in the oven for 20-30 minutes until lightly golden.
