This carrot cake is wonderfully moist, fluffy, and subtly flavored with cinnamon, with no noticeable carrot taste. It's the perfect treat for picky kids who love sweets. While healthier recipes are coming soon, I had to share this cake first.
In a bowl, mix flour, sugar, baking powder, baking soda, salt, and cinnamon.
Grate the carrots finely using a small grater.
Add the grated carrots, oil, and eggs to the flour mixture.
Stir the mixture with a spoon; it will initially be dry, but the carrots will release moisture, creating the perfect consistency.
Blend everything thoroughly with a mixer for about 2 minutes.
Grease a 28-30cm round baking tray with butter and line it with parchment paper.
Pour the batter into the prepared pan and bake in a medium oven for about an hour.
The cake is ready when it is nicely browned and passes the toothpick test.
Cool in the pan for 15 minutes.
After 15 minutes, remove from the pan, dust with powdered sugar and cinnamon, and allow it to cool completely.
For extra flavor, cover with a cream made of cream cheese, powdered sugar, and cinnamon.
You should definitely try this, it's bound to be fantastic.
