Skillet Marble Cake

There are lots of recipes I instantly click with, they are a success from the first try and they look spectacular. I like to discover them to make your work (and mine) easier in the kitchen every day. This is the case with this marble cake - it's quick, there's no need for baking in the oven, it's cooked in a skillet. It can be used as a sweet treat even when you go on holidays and you don't have an oven.

I was skeptical, but curious, and it was worth the try! I do recommend this skillet marble cake - it's done within half an hour, with minimal effort and basic ingredients found in any kitchen. It will be fluffy, soft, flavourful and very tasty. I think it can be even used for making a layer cake.

The amounts below are for a large skillet of 28cm in diameter but, if you are using a 24-26cm skillet, you can reduce the amounts to half.

Ingredients
Egg

Sugar
200 g
Vanilla Extract
1 tsp
Vegetable oil
120 ml
Buttermilk/Youghurt/Kefir
250 ml
All-Purpose Flour
300 g
Baking powder
10 g
or 1 tbsp
Cacao powder
2 tbsp
Milk
2 tbsp
Step by step
Step 1

In a large bowl, combine together eggs, sugar and vanilla, beat well with a whisk or electric mixer.

Slowly pour the oil in.

Then add the yogurt and mix again.

At the end, stir in the flour together with baking powder, mix well with the whisk until there are no more lumps.

Lightly oil the skillet (unheated) and tip into half of the batter.

To the remaining other half from the bowl add 2 tbsp cocoa and 2 tbsp milk, stir to combine.

Raisins, cranberries, walnuts etc. would go here as well.

Spoon large scoops over white cake batter in the skillet.

Use a toothpick to lightly mix these 2 batters and create a swirl pattern.

Now put the lid on and cook over very low heat for 30 minutes.

After 30 minutes, test the cake with a toothpick - insert and if it comes out clean, it's done.

It's ok if the top doesn't brown, don't panic, that's how it should be.

Let cool in the skillet for 15-20 minutes, then carefully turn out onto a platter.

It's golden brown and nice at the base and you can serve like this, bottom up.

Or face up, with some powdered sugar or cocoa dusted over the top.
