Raw Cauliflower Couscous

A delicious, healthy and unexpectedly full food. Now, on the eve of the holidays with "heavy" food, I would recommend you to try some lighter and healthier garnishes / salads, you will have time to recover after that.

Ingredients
Cauliflower
500 g
Chopped olives
100 g
Fresh parsley
1 bunch
Lemon
0.5 pieces
juice from it
Olive oil
50 ml
Salt and pepper
1 tsp
to taste
Curry powder
1 tsp
optional, for extra color and flavor

Step 1

The cauliflower is washed and put in the robot.

Grind the cauliflower well, but do not overdo it - it should be about the consistency of the couscous.

In a larger bowl place the cauliflower, chopped parsley and chopped olives.

Drain the lemon juice over the entire surface of the vegetables.

Season with oil, salt, pepper and possibly curry - all to taste.
