For a while I became an expert in American pancakes - I kept testing various recipes, each with its advantages, but this pancake recipe is still circulating on the internet and you should know that it is really good. Plus all and cheap, you have the ingredients in the fridge for sure and with a little effort you have a quick and delicious dessert.
I like it a lot because they don't fry in oil and have a very fluffy and soft texture - the whole family eats them brilliantly, the only problem would be that they are eaten too fast.
I served them with homemade strawberry jam.

Prepare the ingredients:
- separate the egg whites from the yolks
- mix the flour with baking powder
- measure the milk in a graduated glass.
With a mixer, beat the egg whites until stiff.
Add the sugar to the yolks.
And beat them well with the mixer.
And now add about 1/3 of the amount of milk, mix well.
And then add about 1/3 of the amount of flour, mix well.
Repeat the procedure 2 more times, alternately adding milk and flour until you finish them.
Then add salt and optionally vanilla, mix well.
The last ones incorporated in the egg whites, mix them lightly so that the air does not come out.
Heat a non-stick pan well and pour about half of the dough polish in the middle.
Make the fire moderate and wait until some air bubbles appear on the surface of the pancake.
Then turn them with a spatula on the other side and let them brown for another 2-3 minutes.
Bake the other pancakes in the same way - you got about 7-8 pieces of this amount of dough out of me.
Serve hot with any jam / jam you like, or with honey.
