Cinnamon Oatmeal Pancakes

This recipe had been on my "to try" list for quite a while, and today I was in the mood for something delicious that wasn't too complicated or heavy. Typically, I have a backlog of recipes waiting to be shared, but these pancakes fall into the category of must-try-now. They turned out incredibly tasty, aromatic, fluffy, and tender, making them a delight to prepare as soon as possible.

The recipe includes raisins, but I forgot them – feel free to add them according to your taste.

Cane sugar

or plain sugar
Vanilla Extract

Sunflower oil
3 tbsp
   
Buttermilk/Youghurt/Kefir
2 cups
   
Oat flakes
1.5 cups
oat
White flour
175 ml
about 3/4 cup
Baking soda
0.5 tsp
   
Baking powder
0.5 tsp
   
Salt
0.5 tsp
   
Cinnamon powder
0.5 tsp
in addition you can add ground nutmeg
Raisins
0.5 cups

Step by step
Step 1

In a bowl, beat the eggs and add the sugar, vanilla, and oil – mix well.

Add the buttermilk, oatmeal, and optional raisins – stir and let the mixture sit for 5-10 minutes.

In another bowl, mix the remaining ingredients – flour, baking soda, baking powder, salt, cinnamon, and optional nutmeg.

Add this dry mixture to the wet ingredients – mix well, but do not overbeat, just until everything is incorporated.

Heat a non-stick pan and scoop the batter into it with a spoon. Cook over medium heat to prevent over-browning.

You'll notice air bubbles forming and small holes appearing on the pancakes after 2-3 minutes.

Flip the pancakes and cook until they are well done on both sides.

Remove them from the pan and let them cool on a plate.

Repeat the process for all the batter. 

Serve them hot with your favorite jam.
