It's not really pink, it actually turns to a beautiful orange and it's from the main ingredient - tomato juice! I had read on a forum about this cake that it is too good to be vegan, of course I said I would try it too.
My husband praised her, he didn't realize the tomato juice, he was even surprised when I told him that it is vegan and has tomatoes in it.

In a bowl measure the tomato juice, oil and sugar, mix well with a whisk.
Add flour and baking powder, stir so that they are not lumpy.
And finally put the flavors - vanilla and grated lemon peel if you have.
Spread a baking tray 26-28cm in diameter with baking paper.
Pour half of the dough and level it with a spoon.
Put the jam or jam (here I used raspberries mixed with sugar ), spread evenly over the dough.
And over the jam pour the other part of the dough.
I used a knife to carefully spread the dough over the jam layer - not to mix them too hard.
This is what the cake looks like before the oven.
Bake for 35-40 minutes at 180 degrees.
Allow to cool well after baking.
And serve, I powdered sugar, but it's not mandatory.
