Easy Strawberry Ice Cream

I tested this ice cream recipe a long time ago when I attended a cooking workshop. It was winter at the time and I had frozen berries. Everyone liked it and I put the recipe on the waiting list. Now its time has come. This is the strawberry ice cream version, but you can use any fruit you like.

The thing here is that you need to have the fruits already frozen (you can freeze them any time in the season to have them at hand). The good part is that you don't need any ice cream machine and don't have to mix in it every half hour to avoid ice crystals to form. What you need is a good blender, 3 ingredients, 5 minutes - and here's a tasty, healthy and beautiful ice cream.

The taste is somewhere between a sorbet and a fruit ice cream with cream flavor. I think you can replace powdered sugar with any other favorite sweetener, adjusting also the amount.

Ingredients

Strawberries
500 g
hulled and washed - you can use any other fruit
Heavy whipping cream 30-35%
200 ml
Powdered sugar
100 g
to taste

Step by step

Step 1

Hull and wash well the strawberries. Let drain for a while in a sieve.

Then, arrange on a tray lined with plastic wrap or bag and place in the freezer for at least 5 hours or more, depending on the time available.

Plastic wrap will help remove the strawberries easier. As they are pretty watery, they will stick harder to the bottom.

You should prepare the ice cream right before serving it, or keep in the freezer for 30 minutes, then serve.

So, place the frozen strawberries in a food processor / blender.

Pour over heavy whipping cream.

Add powdered sugar or any other sweetener.

And carefully turn on the blender, gradually increasing the speed.

Don't put too much fruit in the blender, we want to get a smooth mixture.

This is what the ice cream looks like after 5 minutes of mixing.

It may not be perfectly smooth, but the blender did its best, so it's very good as it is.

If you want the ice cream a bit harder, put it in a box and keep in the freezer for 30 minutes.

We served it immediately, it was soft and creamy.

Use your imagination, you can put any flavors you like and make additions. I am a fan of simple and classic things, especially in desserts.
