Khmeli-Suneli Georgian Spice

Khmeli-Suneli, or Hmeli-Suneli, is a basic spice in any Georgian or Armenian housewife's kitchen. It is essential in most Caucasian dishes and sauces. With a rich and very interesting aroma, it can be used successfully with all types of meat, fish, tomato sauces, adjika, rice etc.

The well-known grilled meat - the Caucasian Shashlyk, can also be prepared with it. I like to use this spice especially when cooking roasted chicken in the oven (thighs or whole).

I usually buy it ready-made when I go home to see my mother in the Republic of Moldova. It's very common and easy to find in most stores in the former Soviet countries. But since I don't go there that often, I decided to prepare it myself, at home, with ingredients that can be found here, in my country. There are many variations to Khmeli-Suneli. I chose the combination which has all the ingredients that are available here.

The only one that might be harder to find in supermarkets is Fenugreek, but it's certainly quite popular and you can buy it in health stores or online.

Ingredients

Laurel leaves
4 pieces
Sweet paprika
1 tsp
you can use crushed chili flakes
Dry parsley
2 tsp
Dried dill weed
2 tsp
Dried marjoram
2 tsp
Dried tarragon
2 tsp
Fenugreek
2 tsp
Ground coriander
1 tsp
or seeds
Whole black pepper
0.5 tsp
Salt
2 tsp

Step by step

Step 1

The hardest thing is to find and collect all the spices for this mix. I found fenugreek in a neighbourhood health store. I also saw they sell it at Farmacia Tei.

Carefully measure all the ingredients according to the recipe and put them in a deep bowl or plate.

Mix together well.

Grind the mixture very finely in a coffee grinder.

Store in a dry airtight jar and use as needed.

It's wonderful in combination with any meat, sauces, fish, rice etc.
