Vegan Walnut Cinnamon Pinwheel Cookies

Vegan Walnut Cinnamon Pinwheel Cookies

These vegan walnut cookies were very good and crunchy. The whole family liked them. They are wonderful with tea or coffee, but the big plus is that they are simple and quick to make.

You'll see that all the ingredients are accessible. You can use any nuts or hazelnuts you have at hand, and the cinnamon is optional. I personally liked them with cinnamon, but it covers the nutty flavor, so I made two versions and both were delicious.

White flour
350 g
you can combine with wholemeal flour, as well
Corn starch
140 g
Baking powder
2 tsp
0.5 tsp
12 tbsp
200 ml
Vegetable oil
140 ml
Vanilla Extract
1 tbsp
200 g
Cinnamon powder
1 tbsp

Step by step

In a large bowl, combine the following dry ingredients: 350 g of flour, 140 g of cornstarch, 2 teaspoons of baking powder, 0.5 teaspoon of salt and 6 tablespoons of sugar.

Then add 200 ml of water, 140 ml of oil and one tablespoon of vanilla essence.

Mix everything with a spoon until the ingredients are combined and the dough is beginning to come together.

Then start kneading with your hands. Turn the dough out onto the table and knead until it becomes smooth, soft and not at all sticky. Cut into two pieces and shape them into balls. Allow 15 minutes to rest, covered with a towel.

In the meantime, grind 200 g of walnuts and combine with 6 tablespoons of sugar. I combined 100 g of walnuts only with sugar and the other 100 g, with sugar and one tablespoon of cinnamon.

Both options are good, it's up to your taste.

With a rolling pin, spread out each dough ball into a rectangular sheet, as thinly as possible. You can dust the table with a little flour.

Sprinkle half of the amount of walnuts and sugar mixture on each sheet. Spread evenly.

Roll up tightly. You can even press lightly while rolling, for the nut to stick to the dough.

Cut into slices about 1 cm thick.

Arrange the rolls in the baking sheet, leaving some space between them.

Press each roll with your fingers to flatten a bit.

Bake the biscuits in the preheated oven to 200 degrees C for 30 minutes or until they are lightly browned.

Let them cool a little before serving.
