My Father's Rice Pilaf Recipe

My father doesn't cook very much but when he does everything is absolutely delicious and special. Baked fish recipe, is also his recipe - those who tried it know how good it is.

This pilaf recipe is actually not complicated at all, it's very simple - all ingredients come in 500 g. Be careful with these ingredients - you will make 3 kilos of pilaf, if you want less decrease the amount proportionately.

About the taste of pilaf - absolutely delicious, aromatic, you won't be able to stop eating. My daughter didn't want to leave the table and asked for a second serving :)

Ingredients

Parboiled long grain rice
500 g
Carrots
500 g
White onion
500 g
Chicken breast
500 g
Tomatoes sauce
2 tbsp
Paprika
1 tsp
Pepper
0.5 tsp
Laurel leaves
3 pieces
Salt
1 tbsp
Sunflower oil
100 ml
Water
1.5 l

Step by step

Note:  Use a deep skillet or a deep teflon pot.

Prepare all ingredients for pilaf, clean the vegetables and the chicken breast, wash them.

Chop chicken breast, and cook into a pan with oil.

Cook it until water evaporates and chicken starts to brown slightly.

Another Note:  Don't grate the carrots, dice them - it will offer the pilaf a different taste ant texture.

Chop the onions.

Saute carrots and onion with sunflower oil in a wok pan until soft.

Add chicken and mix well.

Then add tomato sauce.

Next is the rice - mix well.

Add water, salt and spices - taste and salt more if you like, I recommend to do this step now, and not stir the pilaf too much when it is cooked, it will mush.

When the water starts to boil, turn the heat a bit lower and cover the pot with a lid.

When the rice will be boiled, stir slowly. Leave it on very low heat until vegetables and rice will be cooked.

Serve it warm or hot with some vegetables or salad.

/ because it remembers me about my childhood in a contry side somewhere in East-Moldavia / former Bassarabia/ , former "Romania Mare" between the two world wars.
