I never had the courage to try the well-known "Red Velvet" cake because I have a principle not to use artificial colors in our family's diet. I really like the color, but the composition took me back.
On a forum I found such a variant of bread (which can be turned into a cake eventually), which has a very beautiful color (I failed here to make my camera take out the real image) a kind of dark red with a tendency to the color of chocolate and all that ..... with RED BEET!
Yes, yes - and no one guesses what it's made of because it doesn't feel like beets at all, but here's another way of healthy eating for children, Sofia appreciated it very much, even too much.
Special recommendation - let the cake cool completely, it will have a complete texture and taste. It is good and warm, but a little wetter.

Boil the beets and clean them.
Pass through a blender to be like a puree.
In a bowl, mix the sugar with the oil, add the beets, vanilla and chopped chocolate.
In another bowl, mix the rest of the dry ingredients.
And combine the beet composition with the flour-cocoa - mix with the mixer or whisk.
And ready - forget what a beautiful dough we have.
Pour into a simple cake tin, spread with baking paper and place in preheated oven at 200 degrees for 45 minutes.
After this time, do the toothpick test, if it comes out clean, take it out of the oven and let it cool completely in the pan.
Cut and enjoy with the whole family :)
Good appetite!
