I really like to find healthy combinations for breakfast as an alternative to unhealthy sausages for classic sandwiches. Vegetable, vegetarian pâtés are an excellent source of protein and vitamins, and certainly healthy.
I made another version of mushroom pate before, but at another suggestion I also tried this version, with soy sauce. The pate is very good, I make it very often now and I just took the opportunity to take pictures to show you the recipe. With wholemeal bread it goes great for breakfast - tasty, healthy, full and dietary.

Cut the julienned onion and put it in a pan with 1 tablespoon of oil and half a glass of water.
It is ready when the water evaporates and the onion cooks easily.
Take it out on a plate and set it aside.
Put the well-washed and cut mushrooms in the pan, add half a glass of water and leave to harden / boil.
After about 10 minutes the water in the mushrooms will evaporate and start to brown (even without oil).
When they have browned a little, add the soy sauce, stir and turn off the heat.
Put the mushrooms and onions in a blender, mash them well to the consistency you like.
Season with salt and pepper, be careful with the salt because the soy sauce is salty.
And ready, good to serve and hot and cold.
