		Fresh spinach bunch	
	
				
			500 g		
	
	
		after washing and cleaning, you’ll have about 250 g left

		Butter	
	
				
			1 tbsp		
	
	
		or use oil as an alternative

		Heavy cream (32% fat)	
	
				
			3 tbsp

				Step by step
				
		
	
	Step 1
	
		Wash the spinach thoroughly and cut the leaves into smaller pieces if they are too large.
Melt the butter in a pan and add the raw spinach. If it doesn't fit in the pan all at once, wait for it to wilt slightly and then add the rest.
	 
	
 
	
	Step 2
	
		Once the spinach has wilted completely, add the heavy cream and mix it in.
	 
	
 
	
	Step 3
	
		Let the mixture simmer for about 5 minutes. Add salt to taste.
	 
	
 
	
	Step 4
	
		Crack the eggs directly on top of the spinach mixture.
	 
	
 
	
	Step 5
	
		Cover the pan with a lid, reduce the heat to medium, and let the eggs cook. 
Adjust the doneness of the eggs to your preference.
	 
	
 
	
	Step 6
	
		Turn off the heat as soon as the egg whites are fully set on top. 
For softer yolks, avoid leaving them on the heat for too long.
	 
	
 
	
	Step 7
	
		Serve immediately. Garnish with a sprinkle of cheese or a side of yogurt if desired.
