An ingenious and very, very healthy recipe - I was quite skeptical when I first did it, but after the tasting I completely changed my mind. At one of the fasting-themed workshops we insisted on making and tasting the caviar together - the bowl was actually licked and everyone was surprised by the taste. Do not be afraid of color, the taste and texture is very good, especially knowing all the benefits of chia seeds.

Mix the chia seeds with water, notice that they will absorb it and the composition thickens.
Add lemon juice, finely chopped onion, oil and salt.
Stir, add salt if needed.
Leave in the fridge for at least 30 minutes, for the flavors to penetrate well.
I do it in the evening for the morning and it is perfect for the structure.
Serve with wholemeal bread.
