This cake recipe already sounds good when you read the title. In fact, it's so good that nobody will notice it's a lenten recipe. I only got to smell it and touch it, as it disappeared so quickly. Well, my family can tell you it was delicious.
The cinnamon gives this cake a special color and aroma. In combination with apples and nuts, it's crazy. I also replaced some of the flour with fine oatmeal and so I made it even healthier, with extra healthy fiber.

Squeeze the orange juice.
Wash and core the apples.
Chop the apples in a food processor or blender. You can also grate them.
I prefer the food processor, which can chop the apple into bigger pieces that you will feel later in the cake.
Place the apples in a bowl, add sugar, oil and orange juice - mix well.
Now add flour (and oatmeal if you are using), cinnamon, baking powder and salt - mix well so there are no lumps.
The batter is a bit thicker, so it should. Put the raisins and walnuts, cut with a knife, or chopped in the food processor. Mix.
Pour the batter into a tray (mine was 28x28cm), lined with baking paper or brushed with oil and lined with flour.
Evenly spread out the batter with a spoon or spatula.
Bake in the preheated oven at 180-200 degrees C for 35-40 minutes.
When it's done, remove from the oven and allow to cool completely in the pan.
Slice and taste.
