Oven Baked Vegan Waffles

I came up with another waffle recipe. This time, we tested the vegan or Lenten waffle recipe and we really liked it. It's yet another interesting and delicious dessert for the Lent period and not only. For extra taste and nutrients, you can add oatmeal and any seeds you like - pumpkin, sunflower, hemp, flax, sesame etc. You can also juggle with the types of flour, but I still recommend having some percentage of white flour, just to make sure that your waffles will be good. Replace the white flour gradually and keep testing the waffles along the way.

Ingredients

Soya milk
550 ml
or any other vegetable milk, cow's milk can also be used
Vegetable oil
3 tbsp
Sugar
3 tbsp
Baking powder
10 g
White flour
300 g
can be combined with wholemeal flour
Baking soda
0.5 tsp
Salt
0.5 tsp
Vanilla Extract
1 tsp
you can add cinnamon and other flavors you like
Oat flakes
0.5 cups
and seeds, if you have and like - both oat and seeds are optional

Step by step

In a bowl, combine flour with baking powder, baking soda and salt.

Add vanilla, cinnamon and sugar.

Optionally, you can add oatmeal, preferably finer.

And various seeds. I put a mixture of all the seeds.

Mix all these dry components well.

Pour in milk and oil.

Beat well with a whisk or mixer until the batter is not lumpy any more.

Notice that this time I used 2 silicone waffle molds, they fit perfectly in a classic oven sheet.

I ladled the batter into the molds and I got exactly 8 large waffles.

Bake for 20-25 minutes in the preheated oven at 200 degrees C or until properly browned. Because the batter is egg free and with a lot of fat, it will take longer to brown.

Turn out the waffles.

Allow them to cool slightly before serving.

We served them with fruit on top and a little honey. You can put chocolate sauce, caramel sauce, any jam or preserves.
