I was telling you that I haven't bought puff pastry from the store for a long time since I discovered the quick homemade puff pastry recipe. I like to make it in advance and keep 1-2 servings in the freezer. When I'm in a hurry and I need some special but also simple appetizers, I quickly make these homemade puff pastry cheese bites, or the ones with minced meat as in the recipe here.
Most of the time I prefer pastries with cheese because they are the easiest to prepare, the most loved by children, they do not contain eggs, and, if you go on a picnic, they do not necessarily have to be kept in the fridge. They are just as good hot or cold, you can add some green onions or dill, if you prefer, or change with another filling that you like and will not run during baking - cabbage, potatoes, minced meat, sauteed mushrooms, and so on.
They are great for a school or work lunch, appetizers, road snacks etc. Of course, you can replace the homemade pastry with the store bought one, but I don't recommend it...

Prepare the puff pastry according to the recipe here.
You can make it in advance and keep it in the fridge for up to 5-6 days or in the freezer for a few months. Before using it, defrost it overnight in the refrigerator.
Use a rolling pin to roll out the pastry into a large sheet, about 3-4mm thick. Dust with flour to make it easier.
Cut the sheet into 3-4 strips, 8-10cm wide. Crumble the telemea cheese into medium sized bits and spread it along the middle of each pastry strip.
Roll up each strip carefully.
Gently press with your hands, then cut into 2-3cm wide pieces.
Place these pastry bites in an oven sheet lined with baking paper.
Brush the top with beaten egg and, optionally, sprinkle with sesame or poppy seeds.
Bake for 25-30 minutes in a preheated oven at 200 degrees C, until nicely browned on all sides.
Remove from the oven, let cool for a bit, then serve with great appetite, they are fantastically good!
