Vegan Donuts

These donuts surprised us all, we couldn't even tell they were vegan, so good, fluffy and airy they were! I've been planning for some time to show you a simple vegan donut recipe and this one seems the most wonderful version - we savoured the donuts to the last piece.

Like any other donuts, you can serve them with jam or even plain, dusted with powdered sugar on top. I didn't have time to fill them with jam but even so, everybody was happy to have donuts and their favourite jam on the side. 

You can try them even if you aren't necesarilly looking for a vegan recipe, nobody will tell the difference, that's for sure.

Ingredients

Warm water
250 ml
Active dry yeast
1 tsp
Sugar
2 tbsp
Vanilla Extract
1 tbsp
Salt
0.5 tsp
White flour
350 g
Vegetable oil
500 ml
for frying
Powdered sugar
2 tbsp
optionally, for decor
Jam
50 g
anything you like, for serving

Step by step

In a big bowl, pour the warm water, sugar and yeast. 

Mix to combine and set aside on the table for 10 minutes.

After 10 minutes, add 1 tbsp oil, salt, vanilla extract and flour. 

I recommend mixing the flour in little at a time, rather than all at once, so that the dough is soft - not hard - and doesn't stick.

First, stir all the ingredients with a spatula or a spoon, until the dough is starting to come together.

Turn the dough onto the floured table and knead a little bit, until soft and smooth.

Return the dough to the bowl, cover with a towel and let rise for 30-40 minutes.

After this while, dust the table with flour and use the rolling pin to roll out dough into a sheet of about 5-6mm thick.

Use a glass or a cup to cut out round donuts. 

You can also cut them into squares using a knife - this way, there won't be any remaining bits of dough left.

Allow the donuts to rise for 20-30 minutes, covered with a cloth or plastic wrap.

Then heat the oil well in a skillet or a deep pan.

Lay the donuts into the oil to fry.

Cook the donuts over medium heat (turn the heat down when the oil is hot enough), carefully flip on the other side to brown everywhere.

When they are ready, transfer donuts onto tissue paper to soak up any excess oil.

Serve warm, dusted with powdered sugar on top and the favourite jam.
