Step 1
Pour boiling water over the almonds, let sit for 2-3 minutes, then drain and peel the skins.
Blanching makes them easier to peel.
Step 2
Finely chop the almonds using a blender or food processor.
Step 3
Combine the almonds with the sugar and vanilla extract.
Step 4
Lightly beat the egg and add it to the almond mixture. Mix thoroughly with your hands until the dough becomes sticky.
Step 5
Shape the dough into small balls, flatten slightly to form cookies.
Arrange them on a buttered or parchment paper-lined baking tray (parchment paper is recommended).
Step 6
Bake in the oven for 20-30 minutes until lightly golden.
Step 7
These cookies are delicious whether served warm or cold, and they’ll disappear fast.
