Homemade Bread

Another recipe inherited from my mother and grandmother, in fact the recipe is a general rule how to make bread, it results in many other bread derivatives (with bran, rye, pumpkin, white, etc.). At home, it was baked in the wood oven, and my mother made bread for 2 weeks (about 10 pieces). Here the quantities of ingredients are for 2-3 loaves, give the size of the cake trays. I can add other types of flour to the flakes, to make it healthier and dietary - white flour, rye flour, bran flour, black flour, ground flax and sesame seeds. If you prefer it white, put all the flour to be white, in fact the homemade bread recipe from my mother is like that, only with white flour.

Notice in the video recipe that I made 3 smaller loaves, below in the step recipe you have them in the same amount of dough but for 2 larger loaves.

500 ml
Active dry yeast
2 tbsp
or 50g fresh yeast
1 tbsp
Sunflower oil
4 tbsp
1 tsp
All-Purpose Flour
750 g
you can combine different types of flour here

Step by step

Careful! If you make 3 loaves, they will be a little smaller and more beautiful - as in the Video recipe.

In a larger bowl pour hot water, sugar, yeast and a glass of white flour (I did not put in the video). Mix with a whisk to even out.

Leave the yeast to activate for about 10-15 minutes, you will see some air bubbles in the mayo.

Then add the oil, salt, mix well. Next, add plain white flour or a mixture of various types of flour.

Depending on the type of flour, the final quantity may vary, depending on the texture of the dough.

He took 750-800g in total.

First mix all the ingredients with a spoon until it binds, then with your hands.

Then sprinkle the flour on a plate or directly on the table, remove the dough and knead it, adding flour if necessary - it should be a soft dough, but not stick to your hands.

Grease the bowl in which you prepared the crust with oil. Put the above dough in the bowl, cover everything with plastic wrap and let it rise until the container is full (40-60 minutes).

This is what the raised dough looks like.

Remove the dough, knead it well once more. Let it rest for 10-15 minutes.

Then divide it into 6 smaller pieces.

Spread a thin baguette from each piece of dough. To form a loaf you need 3 and arrange them next to each other.

Weave these 3 tails, make a classic braid.

In this way, make both loaves, place them in cake trays greased with oil or spread with baking paper and let them rise in a warm place.

It must grow to fill the tray.

Before putting them in the oven, you can grease them with beaten egg and sprinkle sesame or poppy seeds on top. In this case, they may brown more quickly on top and you will have to protect them with a piece of aluminum foil placed over the bread in the baking process.

Then bake at medium temperature (180 degrees) in the oven for 45 minutes, until well browned.

As soon as you take them out of the oven, take them out of the trays (more recently I like to leave them in the trays for 20-30 minutes, to steam) and grease them with a little oil on all sides. One important thing to know - if you grease them with a little oil on top of the peel it will remain crispy, if you brush them with water, it will have a softer peel.

Cover with a towel and allow to cool.

Here you can see the 3 smaller breads from the Video recipe.

In the Video recipe I used clean water from the Brita cup , always at hand for any food and drink. Get rid of the carat of water bottles safely.

A little advice - you can freeze one of the breads and you will enjoy it fresh whenever you need it and you may not have time to do it right then.

Good appetite!
