Chicken and Mushrooms Stuffed Pancakes

Super pancakes recipe, although the dough is similar to pancakes, a small detail and we have some delicious, quick and beautiful pies. It is cooked with only a few drops of oil, so they are not oily at all, in addition they can be made with various fillings - meat, mushrooms, cheese, apples, pumpkin, chopped canned pineapple or chopped canned peaches. So what do you have in the house and you like it the most.

Here I made them with chicken breast with mushrooms and grated cheese mixed with feta cheese.

2 pieces
500 ml
Farmers cheese
200 g
Baking soda
1 tsp
All-Purpose Flour
250 g
0.25 tsp
1 tbsp
add sugar only if you make them with sweet filling
Minced chicken meat
500 g
White onion
1 piece
Mushrooms canned
1 piece
Fresh parsley
1 tbsp
chopped parsley

Step by step

First I prepared the meat filling. I cleaned and finely chopped an onion and hardened it in a little oil.

Then I added the minced meat, mixed periodically until the water evaporated.

When the meat is done, about 15 minutes after we add it, we put the drained mushrooms. Stir and leave for another 10 min.

At the end, add the chopped parsley and salt and pepper to taste. Turn off the heat and let the filling cool a bit.

Now we make the dough. In a larger bowl put the cottage cheese, eggs and half the amount of whipped milk.

Mix well with the mixer, add salt and sugar (if you do with the sweet filling).

The flour follows, again mix well with the mixer so that they are not lumpy.

In the other amount of drinking milk add the baking soda, mix well and pour into the dough.

Mix the dough again, it should be as creamy, a little more liquid. If it is too thick you can dilute it with milk.

Grease a hot Teflon pan with 1-2 teaspoons of oil. Pour a dough polisher, when it is seen that it has started to bake, the edges become a little browner - put the filling in the middle.

And lightly fold the dough with a palette of Teflon or wood, to be like a semicircle. Be careful not to leave the filling.

Allow 5 minutes on low heat on each side to cook well.

Here I took a picture with cheese filling and grated telemea.

In this way you make the whole amount of dough with which filling you like. Remove the pies and let them cool a bit. They are very good and warm and cold.

Good appetite!
