Quick Cheesy Chicken Fritters

Here is a wonderful idea of how to turn a dull chicken breast into some crispy, flavourful and delicious fritters! I've tested this recipe several times because I also wanted to try in the low-carb version. Normally, all-purpose white flour is used here, but it can be replaced with almond flour - see the details in the ingredients section and in the steps below.

Another great thing about these chicken fritters is that they don't have to be shaped with the hands, you just spoon the mixture into the pan, without having to stress about the perfect shape anymore.

Ingredients

Chicken breast
1 kg
Egg
4 pieces
Yellow cheese
200 g
Mayonnaise
3 tbsp
I usually make the quick recipe (with egg or milk), using the hand mixer
White flour
3 tbsp
for the low carb recipe, use the same amount of almond flour
Salt
1 tsp
Ground black pepper
0.25 tsp
Chopped dill
2 tbsp
Olive oil
50 ml
I combine it with butter, for frying the fritters

Step by step

You don't have to use the grinding machine to grind the chicken. You can easily dice it using a knife. For this, slice the breast lengthwise first.

Then cut into cubes, as small as possible.

If the cubes are too big, the meatballs might break into bits while cooking.

Place the chicken in a bowl.

Add the eggs and the yellow cheese, coarsely grated.

Then combine the mayonnaise, flour, salt, pepper and chopped dill (optional).

Using a spoon, stir the mixture very well.

Heat well the oil (I combine it with a little butter, too) and scoop out the fritters into the frying pan.

Cook fritters over medium heat until nice brown on both sides.

Serve hot next to some fresh yogurt sauce, or any other sauce you like and a vegetable salad on the side.
