I was telling you that this year we have a lot of pumpkins from our home garden, after we got tired of the pumpkin galette we came across this recipe by chance. To be honest, I was skeptical throughout the cooking process (and I had nothing to lose, because pumpkins spoil if I don't cook them), but the result was amazing. The husband asked for the second portion, he also admitted that he did not expect such a good taste.
We served it with cheese and sour cream, without meat and other vegetables, we had a very full and special dinner.
To taste I would say that there is something between baked carrots and potatoes, really worth a try.

Peel a squash and cut it into 1-1.5 cm thick slices.
Mix the oil with the salt, basil and crushed garlic.
Arrange the pumpkin in an oven tray.
Using a brush, grease the pumpkin slices with the mixture of oil and spices.
Put it in the oven for 40 minutes at 200 degrees.
For me, it baked nicely on top and browned and underneath.
Let it cool for about 15 minutes and serve with whatever you like - as a vegetable garnish, or with some cream cheese.
