Step by step
Step 1
Prepare and wash the meat.
Cut all types of meat into medium-sized cubes, ensuring you do not mix them together.
Step 2
Heat a little oil in a deep pan.
Add the meats one at a time, starting with the one that takes the longest to cook.
Begin with the pork, sautéing until it starts to brown.
Step 3
Add the chicken breast to the pan with the browned pork.
Cook together until the chicken begins to brown.
Step 4
Add the chicken livers to the pan.
Let them cook for about 5 minutes, ensuring they harden slightly but do not brown.
Step 5
Add the sausages to the pan, mix well, and cook for another 5-10 minutes over medium heat.
Step 6
Add the roughly chopped onion to the pan.
Cook for an additional 5 minutes.
Step 7
Pour in the tomato puree or diced tomatoes.
Turn the heat to high and bring to a boil.
Add the bay leaves, reduce the heat, and simmer for approximately 30 minutes.
Step 8
After simmering, season with salt and pepper to taste.
Add the crushed garlic, stir well, and turn off the heat.
Step 9
Serve the Tochitura with polenta (Romanian Mamaliga) and enjoy the rich, savory flavors.
