Raw beets are peeled, washed and passed through a larger grater.
Cut the onion into thin juliennes and fry in a little oil.
When the onion is slightly browned, add the chopped garlic and cook for 1 minute.
Over the onion and garlic add the grated beets, mix well.
Put the lid on the pan and cook over medium-low heat for 10 minutes. During this time, mix 1-2 more times.
After this time take the lid off, add the chopped tomatoes / tomato paste.
Stir and cook without a lid on medium heat for another 7-10 minutes.
Season with salt to taste and turn off the heat.
It can be served hot or cold, very tasty - fragrant and a little sweet.
