Step by step
Start by preheating your oven to a temperature range of 250 degrees Celsius.
As your oven warms up, slice the zucchini lengthwise into 4 or 6 pieces, depending on the zucchini size.
Line a baking tray with aluminum foil or baking paper, arrange the zucchini slices, and lightly coat them with olive oil.
In a separate bowl combine the pre-grated Parmesan cheese, finely chopped parsley, salt, pepper, oregano, and Herbs de Provence if you have.
Evenly distribute the Parmesan and herb mix over the olive oil-coated zucchini slices.
Bake the zucchini in the preheated oven for approximately 10-15 minutes. To get a nice, golden-brown finish, use the oven's grill function for the final 5 minutes of baking, if it's available. If not, extend the baking time by an additional 10 minutes at maximum temperature. The zucchini may not brown as much, but they will still taste great.
Pair the baked zucchini with any main dish of your choice - meat, fish, potatoes, or rice.
