There are many Lent recipes on my website. It's really a challenge for me, which gives me an extra reason to test more vegan recipes. Apparently, time for Lenten pancakes hadn't come. I tried about two recipes, I didn't like any of them, I threw away the batter and didn't go on.

Then I said I'd try this recipe, although I saw there were quite a lot of comments, both negative and positive. I had nothing to lose, just some water and flour :)

I accurately weighed all the ingredients. I paid very close attention to all the details (although there are only a few ingredients, we still need to pay attention to the recipe) and it worked. The final confirmation came, of course, from my family. They ate without realizing that the crepes were vegan. My husband asked me what I put in them and was shocked by the answer :)

Of course, you can add various flavors: cocoa, cinnamon. I used vanilla for one batch, poppy and turmeric (to get the yellow color) for the other. The turmeric reacted with the baking soda and my pancakes turned out deep red. I posted a photo in the last step. At least Sofi was absolutely delighted :))

Ingredients

White flour
200 g
Water
500 ml
Baking soda
0.5 tsp
Salt
0.5 tsp
Sugar
1 tbsp
+ flavors: cocoa, cinnamon etc
Sunflower oil
6 tbsp

Step by step

Step 1

In a bowl, combine flour with salt, baking soda and sugar, mix well.

Add a little water, stirring constantly with a whisk until the batter is smooth and not lumpy.

It should be like regular pancakes batter, even a little thicker than the one with eggs.

Finally, add the oil, mix well.

Heat a pan properly, and if I say "properly", I mean it.

Pour a little oil and spread it with a brush or wipe with kitchen towel (I do this to avoid excess oil).

And we go on as with regular pancakes. Pour half a ladle of batter, or even more, depending on the size of the pan. Bake over medium heat. Do not rush to turn the pancakes on the other side, they may be stickier as they don't have eggs.

I usually leave the pancake a little longer in order to flip more easily.

Notice they haven't browned too much, precisely because they don't have eggs.

I only grease the pan before the first pancake, after that, I don't.

As you cook the crepes, place them on top of each other to stay warm - they'll get softer and softer.

You can serve the crepes in the classic way - with your favorite jams and creams.

If you don't put sugar in the mixture, you can also use salty fillings.
