I really like this season, when vegetables and leafy greens are coming along. The first ones are, of course, the lettuce and the green onions and garlic. Apart from salad, I didn't know another way of preparing them and this food idea came right on time. Very fast, good and flavorful, you can use as much onion and garlic as possible, as they are the most suitable for this food.
It is very tasty with polenta, potatoes or simply with bread.

Wash and dry the chicken. Cook on both sides with a little oil in a deep pan.
Add the garlic and green onions, cut into larger pieces, not finely chopped.
Mix well and cook for a while.
Pour over half a glass of water and bring to the boil.
When it starts to boil, turn the heat down and cover the pan with a lid.
Cook like this for 15-20 minutes until the chicken is done.
After this time, add the diced tomatoes, tomato / pepper paste, mix well. Let simmer without a lid for another 10 minutes.
Season with salt and pepper. Turn off the heat and let sit without a lid for about 10 minutes, to infuse.
Ready! Serve with whatever you like, the sauce is delicious.
