Carrot Halwa

Although the name Halwa will lead you to a completely different product, a different texture, I suggest you try this less common one. I "stole" the idea and tasted it at the Namaste India festival. It was this recipe that impressed me the most, maybe also due to the fact that I didn't expect such a taste from our banal carrot.

I have already managed to impress with this dessert many people, it has the effect of "Wow!" more to everyone. And now in the season of new and healthy carrots, I definitely recommend you to try it. It can be served as such or with a little vanilla ice cream, it will be even more excellent. About the taste - you will not feel the classic taste of carrot, it combined with butter, cardamom and sweet cream becomes something fabulous.

So note - in the recipe I used heavy cream, I tried to replace it other times with condensed milk (thick and very sweet) but still I liked the cream version a bit more.

Ingredients

Carrots
500 g
Butter
50 g
Sugar
100 g
Heavy cream (32% fat)
100 ml
or condensed milk
Ground cardamon
0.5 tsp
Nuts
100 g
you can use walnuts, peanuts, hazelnuts, etc

Step by step

1

Carrots are cleaned and washed.

2

Then grind them well in the robot or you can give them through the smaller grater.

3

Melt the butter in a pan, then add the cardamom and mix quickly.

4

And immediately add the carrots, mix well and cook over medium heat, stirring periodically until well softened.

5

After about 10 minutes add the sugar, stir and continue to cook until the carrot is soft and without juice.

6

Add the sweet cream, mix well and simmer for another 10-15 minutes on low heat.

7

The carrot composition is ready when it is soft and has no juice at all, even if it is a little drier.

Turn off the heat and set it aside.

8

Prepare small forms to serve the halva in individual portions. You can use small cups, glasses or bowls for ice cream, etc.

I made 1 kg of carrot halva here, so double portion, you can see on the picture how many shapes I filled.

So, put the carrot composition in the molds and let it cool completely, then leave it in the fridge for a few hours.

9

I recommend sprinkling some nuts over the halva, they will give an even better taste and texture.

Take any nuts / hazelnuts you have in the house, brown them a little on the pan and crush them in a food processor or with a spatula.

10

Serve cold, with nuts sprinkled on top and in an even more special version with vanilla ice cream. But it is delicious anyway, I definitely recommend you try it.

Good appetite!
