This Bellini Cocktail is a symbol of Venice and if you were there and did not taste it I would say that a small part of the charm of this city has been lost. I have seen it in almost all souvenir shops and most of the time it is an artificial and commercial Bellini - the original Bellini recipe is so simple and banal, a beautiful color and a slightly velvety taste, it has nothing in common with drinks commercial carbonated gas called "Bellini". You can easily prepare it at home, I really recommend you to pamper your "halves" or guests with a glass of this very fine drink.
I recommend in the peach season to prepare it with fresh fruits, in winter it goes well with peach juice.

Take well-ripened and sweet, fragrant peaches.
Peel a squash, grate it and squeeze the juice.
Put them in a blender and make a very fine puree from them.
Pour about half a glass of peach puree.
Add in 2-3 rounds the same volume of cold Prosecco, mix well with a teaspoon each time.
Add a little because it is sparkling wine and you will "run" out of the glass if you pour it all at once.
Serve immediately, while it still has a nice foam on top.
If the foam is still left, pour another drizzle of Prosecco just before serving.
