I don't know where this sudden interest in cocktail recipes comes from. We started to like cocktails and we want to discover new, simple, beautiful flavors and tastes. This Rossini cocktail is Bellini's brother, the same sparkling white wine (Prosecco), but this time mixed with strawberry puree. It's a beautiful, elegant and perfect drink, specially in women's view. So, dear husbands, friends and lovers, do not hesitate to surprise the women in your life!

We start by quickly preparing the strawberry puree.
Prepare/wash the strawberries. Make sure to have at hand the sugar and the lemon juice.
Place the strawberries, the sugar and 1-2 tablespoons of lemon juice in a blender.
Blend until you get a nice and fine puree.
Pour about 50ml of puree into a champagne glass.
Pour sparkling wine (the same amount as the puree) in several batches (it will make great foam).
Mix well each time you pour some wine.
Serve immediately while it's still foamy.
To be even faster, I recommend making the strawberry puree 1-2 hours before serving. And yes, don't forget to keep the wine cold :)
