Fennel and Orange Salad

With this fennel salad I got out of my comfort zone and I'm very happy. It was a success from the first time, I really liked the fennel taste and especially in combination with olives and oranges. I'd been looking for a simple fennel recipe for a long time, out of interest and of boredom but ... also because I'd never eaten and I was curious. To put it simply, it's a kind of crispier cabbage with a slight dill flavor, which is very convenient and not confusing at all and I do like it.

So, if you got bored of the classic combinations, try a fennel salad. You won't need much, a bulb is enough and it's reasonably priced. It can be now found even in the simplest supermarkets and I recommend trying. If you're wondering why I didn't put lemon juice or vinegar in the salad, you should know it's not necessary - orange juice is enough and everything is fine.

I took this simple combination of fennel with oranges and olives from an Italian lady. I trusted what I saw and it really is super good. The Italians do know how to cook fennel. I will show you yet another simple and tasty recipe, because I've just started feeling the taste :) 

Ingredients

Fennel
1 piece
if you don't have, can be replaced with cabbage or iceberg lettuce
Oranges
1 piece
Pitted olives
100 g
I like to make the salad with black olives, but I think Kalamata would also do
Salt
0.5 tsp
Extravirgin olive oil
2 tbsp

Step by step

Step 1

Wash the fennel well and cut away the large stems, which grow from the bulb.

Cut the bulb into 4 pieces - quarters.

Now cut each quarter into thin julienne strips, discard the root end.

Peel the orange, I recommend just like in the video.

Cut the orange into medium-sized cubes, make sure you collect all the juice.

And now, move the fennel slices to a bowl, add the orange cubes and its juice.

Add the olives.

And season the salad with salt and olive oil.

Toss well, move to a more beautiful salad bowl and serve.

I recommend serving immediately, but even if it's saved for later, it's not really bad. It will release juice and the fennel will marinate together with the oranges.
