Semolina Porridge

In our continuous rush for fancy foods and recipes we forget about basic meals like this milk with semolina - traditional, common but very creamy and tasty. Lately I've noticed that, for my family, the time spent in the kitchen is not a  relevant criterion - I can spend a whole day cooking some sophisticated dish, yet they will appreciate more milk with semolina, which takes only 15 minutes to cook!

You shouldn't forget about mum and grandma's recipes, there is a good reason why children love them - they are actually really tasty... We like to have this milk with semolina pudding with any kind of jam but the blueberry and strawberry jams are the 'stars'. Also, try it with a little butter and honey on top, it's one of my favourites.

Ingredients

Milk
1 l
Semolina flour
100 g
about 10-12 tbsp
Salt
0.5 tsp
Butter
30 g
Sugar
100 g
optional, or to taste
Vanilla Extract
1 tsp
optional

Step 1

The first step is important, you must prepare and measure the ingredients.

Pour the milk in a heavy-bottomed pot or in a dutch oven and place over heat.

Don't go too far away, milk might boil over if you are not paying attention :)

When it comes to the boil, start adding the semolina in a trickle while stirring continuously with a whisk. This won't let the pudding get lumpy, but it will make it smooth and creamy.

Now simmer on low heat for 10-15 minutes. Use the whisk to stir frequently.

Then add in the butter, vanilla and sugar to taste.

If you serve the pudding with a jam, you can skip the sugar or replace it with any sweetener of your choice.

Turn heat off and pour the pudding onto plates right away. Let sit for 10 minutes, I like it when a skin forms on top (and it will get a more pudding-like texture). I love to spread the jam over the milk with semolina only after that.
