Coconut Lemon Bars

These are fast and very fragrant cookies. During the baking process, the coconut layer will separate from the rest and it will be like the Magic Cake - a fragrant top above and lemon souffle at the bottom.

It's done very quickly, just have the patience to let cool completely. It was so tasty and fragrant that I had to hide it from Sofia because she wouldn't stop eating.

Ingredients

Butter
50 g
Lemon
1 piece
Sugar
170 g
Milk
200 ml
White flour
200 ml
2/3 of a cup
Coconut flakes
50 g
Egg
3 pieces

Step by step

Melt the butter and leave it to cool for a bit.

Meanwhile, grate the lemon peel - don't touch the white part.

And squeeze all the juice from the lemon.

In a bowl, combine the melted butter with the rest of the ingredients. Beat well with a whisk or mixer.

The batter will be rather liquid, that's how it should be.

Pour it into a pan lined with baking paper. I used a silicone pan (28cm in diameter) and didn't line with parchment.

Bake in the preheated oven at 180 degrees C for 40-45 minutes.

Let cool completely. Slice as you like - I made triangles.
