Panzanella Salad

If you are bored of the classic tomato salad, I recommend you try her Italian "sister" - Panzanella. A few small changes and you will have a super delicious and interesting salad, my family really appreciated it - the favorites were of course the croutons.

4 pieces
choose tomatoes of different colors, for decoration you can use cherry tomatoes
2 pieces
or you can replace them with peppers
Red onion
1 piece
White bread
200 g
3-4 slices
2 pieces
that is 2 branches of fresh basil
Extravirgin olive oil
50 ml
0.5 tsp
100 g

Step by step

We prepare the croutons first:

- Pour a little olive oil in a pan, add bread cut into larger cubes and sprinkle a little salt over it.

- Periodically mix bread cubes, to brown well on all sides. Finally, when they are crispy and brown, sprinkle them with a little more olive oil and turn off the heat under the pan.

Allow to cool.

Tomatoes are cut into pieces, not too small.

Add the sliced cucumbers on top.

And finally add the julienned onion and a finely chopped basil branch.

Just before serving, add the croutons, another 2-3 tablespoons of olive oil, salt to taste and mix.

If you add the croutons too early, they will soften too much and will not have the same charm in the salad.

Garnish with mozzarella and cherry tomatoes on top, don't forget to put the other basil branch on the plate - also for decoration.

Serve immediately and with great pleasure :)

Good appetite!
