	Step 1
	
		Roast the bell peppers either in the oven, on a grill, or a griddle. 
If  using an oven, preheat to 250 degrees Celsius and rotate them until the  skins blister and are ready to peel.
Note: the image may show more  peppers, but you only need to prepare 2 for this salad.
	 
	
 
	
	Step 2
	
		Once cooled, peel the peppers and allow them to cool completely before proceeding.
	 
	
 
	
	Step 3
	
		Chop the tomatoes, cucumber, and red onion into bite-sized pieces for  the salad. Tear the roasted bell peppers into larger strips.
	 
	
 
	
	Step 4
	
		Combine the vegetables in a large bowl. Add the chopped parsley,  sunflower oil, vinegar, salt, and pepper. Toss everything together until  well mixed.
	 
	
 
	
	Step 5
	
		Finish the salad by sprinkling grated feta cheese over the top and garnishing with olives. Though the olives were momentarily forgotten, they are a crucial final touch.
