Roasted Zucchini Salad with Feta and Tomatoes

Grilled zucchinis are our favorite garnish, but there are also times when we want to add something to them. That's how I came up with the zucchini and carrots recipe. Now I wanted to make zucchini salad and I got it right.

It's one of our favorite salads, it's beautiful, tasty, filling and interesting. On top of everything, it will keep your weight under control :)

Red onion

or white
Salty cheese
100 g
Extravirgin olive oil
3 tbsp
+ vinegar, if you want (I don't use it, I think the juice from the tomatoes is enough to give the right aroma and taste)
0.5 tsp

Step by step


Wash the zucchinis, cut into rounds (about 3mm thick) and cook on a stovetop grill.


Let the zucchinis cool, then transfer to a deep bowl, the one in which you'll make the salad.


Wash the tomatoes and cut into thick and beautiful slices. Add to the zucchinis.


Add salt and oil, mix well.


I moved the salad to a nicer plate, then I put on top the onion and the Telemea cheese.

Or you can just mix them all together.


Serve immediately and with great pleasure :)
