Greek Pita Bread for Gyros

In order to make good gyros, we need the soft and flexible Greek pita bread. When I was in Greece, I made a stock of 2 bags and I stored them in the freezer. Here, I sometimes find them in supermarkets in the frozen bread/buns department. I also tried to replace them with the simple Arabic flatbreads, they will do as well when the craving strikes :)

So, you will find below a quick and simple recipe, the Greek soft pita bread will certainly make an impression and you will cook a gyros even tastier than the Greek one. The complete gyros recipe is coming up next in the following days, it's brilliant, so stay tuned!

Ingredients

White flour
500 g
Bakers yeast
50 g
or 25g dried yeast
Water
300 ml
Sugar
1 tsp
Salt
1 tsp
Olive oil
80 ml

Step by step

Step 1

In a bowl, pour 300ml warm water, add in the yeast, 1 tsp sugar and 100g flour. 

Whisk and let 10-15 minutes until a foam forms.

After this time, pour in oil, salt and the rest of the flour. 

Start to mix/knead the dough with a  spoon.

Turn dough onto floured table and continue to knead with your hands until it is smooth.

Place dough back in the bowl and let rise for about 1 hour.

Notice how in 1 hour it triples its volume.

Remove dough from the bowl, cut in 8 equal parts and shape 8 balls. 

Let rest on the table for 10 minutes.

Use the rolling pin to roll out each ball into a circle of about 24-26cm in diameter.

Heat up a skillet and brush it with a bit of oil, before you cook each pita bread.

Now place a pita bread in the skillet, over medium heat and pinch the air bubbles with a fork.

Cook them until golden brown on both sides.

Repeat the procedure for all pitas and put them in a pile to keep them warm and flexible when bended. 

Of course, you can serve them with any food, not just with gyros :)

Try to add more flour next time.

This recipe was awesome, i made a double batch and it made so many pitas, they stay soft and bendable and are delicious! Would highly recommend!

Using a stand mixer to kneed the dough helps a lot! It was all great and super easy It would be nice to know the nutritional value to future recipes though! (calories, fat content, Carbs, etc.)

Can you freeze them, if so, how to store and how to thaw and re-heat. I haven't made it yet. But there is only 2 of us and would need to do something with the rest. Thanks

I haven’t tried freezing them myself, but I don’t see why it wouldn’t work. Once cooled, store them in airtight bags. Let them thaw at room temperature for a few hours, then warm them briefly in a pan or oven before serving.

Dunno if you'll see this in time as my dough is rising now, but do you heat the skillet on medium? If not, what heat level?

Ah I missed that. Thanks. I started out a bit below medium, then medium seemed better eventually.
