One of my cherished appetizer recipes showcases the intriguing blend of eggplant and walnuts. No matter how many times I've made these rolls, their unique and delightful combination never ceases to amaze me.

For those who might find the walnut flavor overpowering, introducing some grated cheese to the filling can help mellow it out. And for a lighter twist, feel free to swap out mayonnaise for yogurt, or even mix the two!

Ingredients

Eggplant
500 g
Chopped walnuts
200 g
Yellow cheese
100 g
grated
Mayonnaise
100 g
or a mix with yogurt for a lighter version
Garlic cloves
3 pieces
crushed
Salt
0.5 tsp
adjust to taste

Step by step

Step 1

Slice the eggplants lengthwise. You can either grill them, fry in oil, or lightly coat with oil and bake in the oven using baking paper or a non-stick tray.

Process the walnuts in a food processor until finely ground.
