Ingredients

Bananas
220 g
peeled and mashed with a blender (about 2 large bananas)
Lemon juice
2 tbsp
Sugar
200 g
Sunflower oil
125 ml
White flour
300 g
Baking powder
10 g
Salt
0.5 tsp
Cinnamon powder
1 tsp
optional; can be combined with ginger and cardamom or omitted
Coconut flakes
80 g
finely grated, dried coconut flakes

Step by step

Mash the bananas, mix with lemon juice, and place in a large mixing bowl.

Add sugar and oil to the banana mixture, and mix well.

Add flour, salt, baking powder, and optional spices to the mixture. Mix until smooth and free of lumps.

Incorporate the coconut flakes, mixing thoroughly.

The dough will be sticky and thick.

Scoop half a spoonful of dough at a time.

Grease your hands with a little oil, and shape the dough into balls.

Place the balls on a baking tray lined with parchment paper, spacing them 2 cm apart.

Bake in a preheated oven at 200°C (392°F) for 20-25 minutes, until nicely browned.

Place the tray higher in the oven to ensure even cooking.
