Italian Tuna and Bean Salad

This salad is brilliantly simple, tasty, quick, hearty and full of nutrients. With 2 tins and 3 moves you can have a starter salad or even a meal in itself. And that's not a surprise, considering this is the Italian 'Insalata di tonno e fagioli'. I often wonder how they can make such a special, yet simple meal from a few basic ingredients. I warmly recommend this salad, we absolutely loved it, not to mention I always have tins of tuna and beans in the pantry.

You can boil the beans yourself to make this salad, or use tinned beans for emergency situations, that's up to you. Either way, this tuna and bean salad is tasty and nice.

Ingredients

Boiled beans
300 g
tinned or boiled at home
Ton bucati la conserva
160 g
Red onion
0.5 pieces
or white onion, or scallions
Fresh parsley
1 bunch
you can add some dill or other preferred greens
Lemon
0.5 pieces
Extravirgin olive oil
50 ml
pick the one you like how it tastes
Salt
0.5 tsp
to taste
Ground black pepper
0.25 tsp

Step by step

Step 1

Place the well drained beans and the tuna in a bowl.

If you are using tinned beans, place in a sieve first and rinse under running cold water.

Add sliced onions and finely chopped greens.

Season with salt and ground black pepper, add the juice from half a lemon and the olive oil.

Toss everything together, taste and adjust with more salt or lemon juice, if needed.

Serve and savour right away.
