Vegan Carrot Oatmeal Cookies

With this healthy cookies recipe, I will make several categories of people very happy: first, the ones who crave for a homemade dessert, then, the mothers looking for healthy snacks for the children, the vegetarians or the ones who fast, and, of course, the people who have a healthy and balanced (yet tasty) diet.

What caught my eye in the first place was the mixture. The cookies don't look great on the outside, but the taste is very good. They are somewhat soft, with a gingerbread-like texture. Maria liked them in particular, Sofia will have something good for her school lunch, dad will have a nice dessert for tea and mom just smells them - that's the most dietetic :) 

Regular flour can be replaced with wholemeal flour, plain sugar with honey or cane sugar, sunflower oil with a healthier one, coconut oil etc. I used the classic ingredients, I didn't change because I wanted to clearly see the process and the texture.

Ingredients

Carrots
200 g
peeled, washed and grated
Raisins
50 g
can be replaced with any other dried fruit, or omit
Chopped walnuts
2 tbsp
Vegetable oil
60 ml
Sugar
2 tbsp
3-4 tablespoons, if you want sweeter
Quick oats
90 g
All-Purpose Flour
120 g
Baking powder
0.5 tsp
Cinnamon powder
0.5 tsp
or other flavors - vanilla, cardamom etc.

Step by step

Grate the carrot on the fine wholes side.

Add the raisins and the oil to the grated carrot.

Then the chopped walnuts, sugar and flavors.

Finally, pour over the oatmeal.

Mix well and leave for 30 minutes to soften, allowing the flavours to infuse.

After this time, add the flour and baking powder.

Mix well, better with your hands, to get a smooth dough.

Take a piece of dough, about the size of a walnut and shape into a ball.

Flatten with your fingers, and we have a biscuit.

Shape all the biscuits like this, I had 19. As you shape them, place in the oven tray. I didn't grease the tray with anything, it was dry.

Bake in the preheated oven at 180 degrees C for about 30 minutes. Check periodically, the biscuits shouldn't brown too much, especially underneath.

They are just as good warm or cooled.
