Ingredients

Dark chocolate
320 g
Butter
240 g
Sugar
320 g
Egg
6 pieces
White flour
200 g
Baking powder
10 g
Coconut flakes
80 g
Almonds
80 g
crushed, alternatively, use an extra 80g of coconut flakes
Sweetened condensed milk
350 g
increase to 500 g if using only coconut

Step by step

Step 1

Melt the chocolate and butter in a heat-resistant bowl over low heat, stirring occasionally.

Meanwhile, prepare the remaining ingredients.

Mix the flour with the baking powder.

Line a 20x30 cm baking tray with parchment paper.

Prepare the coconut mixture by combining the coconut flakes (and almonds, if available) with condensed milk.

Aim for a thick cream-like consistency.

Once the chocolate and butter have melted, remove from heat, mix in the sugar, and let it cool slightly.

Add the eggs one at a time, whisking well after each addition.

Blend in the flour to achieve a smooth, homogenous batter.

Pour half of the chocolate mixture into the tray, followed by dollops of the coconut mixture. Repeat with the remaining mixtures.

Gently swirl the mixtures with a thin knife or toothpick.

Bake at a medium temperature for 30-40 minutes. Check doneness with a toothpick.

Remove from oven, invert onto a plate, and allow to cool.

Cut into cubes and enjoy warm or cold (cover with cling film to prevent drying).

WOW -- These brownies are amazing! We are taking them to a holiday party tonight! I am 61 years old and have never succeeded in making brownies from a mix, so I gave up trying years ago. I never tried from scratch, but this recipe looked like fun and it is top-notch! They are NOT overly sweet and NOT overly gloppy -- the sponge is very light and the texture of the cocoanut/almond mixture really adds something special. I baked at 350 for 34 minutes and turned out of the pan immediately as directed -- I used a big cookie sheet to turn it out using the technique I saw on the Great British Baking Show. I used 70% organic cocoa bars, organic white sugar, vegan sweetened condensed oat milk (sweet!), ground almonds and shredded organic cocoanut. I also used vegan margarine BARS (Earth Balance). I used conventional, organic all-purpose white flour and conventional, organic large eggs. I converted the recipe to cups/teaspoons as needed using Google (note: put in EACH ingredient when you do a Google conversion, because it is not all the same!). It is super fun doing the layers and also swirling gently to mix in the pan. Thank you from the bottom of my heart for this recipe. I can't believe I made something this beautiful on the first try!
